And while we are on the subject of recipes LOL...does anyone have one for a ham and potato soup? I got this giant free ham from the food store but Im not real big on ham. My mom used to make this really good ham and potato soup and I am looking for something similar.

KK, Thanks a million for those yummi sounding recipes.

I wish I could help with the ham & potato soup. I've made just plain potato soup but haven't made that for years. All I remember is onions/celery/potatoes and then a white sauce as a thickening agent. I don't remember if it was good or not. :'( I guess it was good, I ate it. :'(

Misty, I thought I posted that recipe here but guess not. It is not a recipe written anywhere but in my head so I'll have to make sure I don't forget something. I'll just make a new thread and post it when I get it written up.

Hey JJ, I made a casserole tonight that your mom might like. I just cooked up some brown rice & then mixed in chopped onion & green pepper, a can of cream of chicken soup, a can of cream of celery soup, enough milk to make it creamy & salt & pepper to taste. I then boiled some chicken (just enough to start it cooking), shredded it up & mixed it into the rice mixture. I spread it in a casserole dish, topped it with lightly buttered corn flakes & baked it at 350 for about 45 minutes. Everything was very tender & it tasted so good! I made a portion for Shannon with Morning Star veggie "chicken" strips, chopped up & she said hers tasted awesome too! Leftovers could be frozen as homemade TV dinners for another day too!

That sounds like something she would like. I won't boil the chicken because I can't take the smell but I could buy a roasted chicken and chop that up.

I'm sorry I haven't posted that recipe yet for the cheesy and broccoli soup. I haven't made it in a while and last time I forgot to note how much of what I put in. I could guess, but if it turns out too runny, it isn't very good so I need to measure how much water I start out with, etc. If someone makes it, I want to make sure it turns out like mine.

This is soooo strange. I went to preview my post and everything is black except the text boxes, smileys, ubbc buttons. My preview post is totally black. Weird. I imagine it will fix itself once I post this.

Yep, it fixed itself.
